Cucumber Salad Recipe
Ingredients:
- 4-5 medium cucumbers, thinly sliced
- 1/2 onion, thinly sliced (red or white onion works well)
- 1-2 cloves garlic, minced
- 1/4 cup white vinegar or apple cider vinegar
- 1/4 cup water
- 2 tablespoons granulated sugar (adjust to taste)
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
- 1 tablespoon fresh dill, chopped (optional for extra flavor)
- 1 tablespoon olive oil (optional)
Instructions:
- Prepare the Cucumbers:
- Thinly slice the cucumbers using a knife or mandoline for even slices.
- Place the cucumber slices in a large bowl or directly in a serving dish.
- Add the Onion and Garlic:
- Thinly slice the onion and add it to the cucumbers.
- Add the minced garlic to the bowl.
- Prepare the Dressing:
- In a small bowl, whisk together the vinegar, water, sugar, salt, and black pepper until the sugar and salt are fully dissolved.
- If using olive oil, whisk it into the mixture.
- Taste the dressing and adjust the seasoning if needed (more sugar for sweetness, more vinegar for tanginess, etc.).
- Combine Everything:
- Pour the dressing over the cucumber and onion mixture.
- Add the red pepper flakes and chopped dill (if using), then toss everything together to coat the cucumbers evenly.
- Marinate and Serve:
- Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve chilled as a refreshing side dish.
Tips:
- You can adjust the sweetness and acidity of the dressing to your preference by adding more sugar or vinegar.
- For extra crunch, you can add thinly sliced bell peppers or radishes.
