Crispy Vegetable Fritters
Ingredients:
– 2 medium potatoes, peeled and grated
– 1 medium zucchini, grated
– 1 medium carrot, peeled and grated
– 1 small onion, finely chopped (optional)
– 2 eggs
– 1/4 cup (30g) all-purpose flour
– Salt and pepper to taste
– 1/2 teaspoon garlic powder (optional)
– 1/4 teaspoon paprika (optional)
– Oil for frying
Instructions:
**1. Prepare the Vegetables:**
– Grate the potatoes, zucchini, and carrot. If the zucchini is very watery, place it in a clean kitchen towel and squeeze out the excess moisture.
– Combine the grated vegetables in a large mixing bowl. Add the finely chopped onion if using.
**2. Mix the Batter:**
– Add the eggs, flour, salt, pepper, garlic powder, and paprika to the bowl with the vegetables. Mix well until all the ingredients are evenly combined.
**3. Fry the Fritters:**
– Heat a generous amount of oil in a large skillet over medium heat.
– Once the oil is hot, spoon the vegetable mixture into the skillet, flattening each spoonful slightly with the back of the spoon to form fritters.
– Fry the fritters for 3-4 minutes on each side, or until they are golden brown and crispy.
**4. Drain and Serve:**
– Transfer the fried fritters to a plate lined with paper towels to drain any excess oil.
– Serve the fritters warm, possibly with a dipping sauce such as sour cream, yogurt, or a garlic aioli.
