Crispy Potato Patties
Ingredients:
– 3 large potatoes, peeled and cubed
– 1/2 cup grated cheese (cheddar, mozzarella, or your choice)
– 1/4 cup grated carrots (optional)
– 1/4 cup finely chopped green onions or chives
– 1/4 cup finely chopped parsley
– 1 egg
– 1/2 cup breadcrumbs
– Salt and pepper to taste
– 2 tablespoons all-purpose flour
– Vegetable oil for frying
Instructions:
1. **Prepare the Potatoes:**
– Boil the potatoes in salted water until they are soft and can be easily mashed, about 15-20 minutes.
– Drain the potatoes and mash them in a large bowl until smooth.
2. **Mix the Ingredients:**
– To the mashed potatoes, add the grated cheese, grated carrots (if using), chopped green onions, parsley, egg, and breadcrumbs. Mix until well combined.
– Season the mixture with salt and pepper to taste.
– If the mixture seems too soft or sticky, you can add a bit of flour to help bind it together.
3. **Form the Patties:**
– Take a small portion of the potato mixture and shape it into a patty, about the size of your palm. Repeat with the remaining mixture.
4. **Cook the Patties:**
– Heat a generous amount of vegetable oil in a non-stick skillet over medium heat.
– Place the potato patties in the skillet, a few at a time, making sure not to overcrowd the pan.
– Cook each patty for about 3-4 minutes per side, or until golden brown and crispy on the outside.
– Remove the patties from the skillet and place them on paper towels to drain any excess oil.
