Crispy Potato Bites
Ingredients:
– 2 lbs (900g) potatoes, peeled and grated
– 1/4 cup all-purpose flour
– 1/4 cup grated Parmesan cheese
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 1/2 teaspoon paprika
– 1/2 teaspoon dried oregano
– Salt and pepper to taste
– Oil for frying

Instructions:
1. **Prepare the Potatoes:**
– Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.
2. **Mix the Ingredients:**
– In a large mixing bowl, combine the grated potatoes, flour, Parmesan cheese, garlic powder, onion powder, paprika, dried oregano, salt, and pepper. Mix well until all the ingredients are evenly distributed.
3. **Shape the Potato Bites:**
– Take small portions of the potato mixture and shape them into small cubes or round bites, about 1 inch in size. You can use your hands or a small cookie cutter to shape them.
4. **Heat the Oil:**
– In a deep skillet or frying pan, heat enough oil to cover the potato bites over medium-high heat until it reaches 350°F (175°C).

5. **Fry the Potato Bites:**
– Carefully add the shaped potato bites to the hot oil in batches, making sure not to overcrowd the pan. Fry them for about 3-4 minutes on each side, or until they are golden brown and crispy.
6. **Drain and Serve:**
– Remove the fried potato bites from the oil using a slotted spoon and place them on a paper towel-lined plate to drain any excess oil.
