Crispy Cheesy Stuffed Pockets
Ingredients:
- 6 small tortillas or thin slices of bread (trimmed into circles if needed)
- 2 medium potatoes (boiled and mashed) or 1 cup cooked ground meat
- 1/2 cup grated cheese (mozzarella, cheddar, or your choice)
- 1/4 cup cream cheese or sour cream
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons butter (melted)
- Additional cheese for topping
- Fresh parsley (chopped, for garnish)
Instructions:
- Prepare the filling:
- If using potatoes, mash the boiled potatoes and mix them with cream cheese or sour cream, paprika, garlic powder, salt, and pepper.
- If using meat, mix cooked ground meat with spices and a little cheese for a creamy filling.
- Assemble the pockets:
- Take a tortilla or slice of bread and place 1-2 tablespoons of the filling on one side.
- Fold it in half to form a semi-circle and press the edges gently to seal.
- Add cheese topping:
- Place the stuffed pockets on a baking sheet lined with parchment paper.
- Brush the tops lightly with melted butter and sprinkle grated cheese over them.
- Bake or fry:
- Bake: Preheat the oven to 375°F (190°C). Bake the pockets for 10-12 minutes or until crispy and golden.
- Fry: Heat a pan with a little oil and fry each pocket on both sides until golden and crispy.
- Garnish and serve:
- Sprinkle chopped parsley over the pockets and serve them warm with your favorite dipping sauce, such as sour cream, marinara, or spicy mayo.
