 Crispy Breaded Zucchini Bites

Ingredients:

– 2 medium zucchinis, sliced into rounds
– 1 cup breadcrumbs (Panko or regular)
– 1/2 cup grated Parmesan cheese
– 1 teaspoon garlic powder
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
– 2 large eggs
– 1/2 cup all-purpose flour
– Olive oil spray or cooking spray
– Fresh parsley, chopped (for garnish)
– Ranch or marinara sauce (for dipping)

Instructions:

1. **Preheat the Oven**:
Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.

2. **Prepare the Breading**:
In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper.

3. **Prepare the Flour and Eggs**:
In another shallow dish, place the flour. In a third dish, beat the eggs.

4. **Bread the Zucchini**:
Dredge each zucchini round in the flour, shaking off any excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it with the breadcrumb mixture, pressing lightly to adhere.

5. **Arrange on Baking Sheet**:
Place the breaded zucchini rounds on the prepared baking sheet in a single layer. Spray the tops lightly with olive oil spray.

Bake in the preheated oven for 20-25 minutes, or until the zucchini bites are golden brown and crispy. Flip them halfway through the baking time for even crisping.
