Crispy Battered Fish Fillets
Ingredients:
– 4 white fish fillets (such as cod, haddock, or tilapia)
– 1 cup all-purpose flour
– 1 cup cold sparkling water (or club soda)
– 1 teaspoon baking powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– Oil for frying (vegetable or canola oil)
– Lemon wedges (for serving)
– Fresh parsley (optional, for garnish)
Instructions:
1. **Prepare the Batter:**
– In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
– Gradually add the cold sparkling water, whisking until the batter is smooth and has no lumps. The batter should be thick enough to coat the back of a spoon.
2. **Heat the Oil:**
– Pour enough oil into a deep skillet or fryer to cover the fish fillets. Heat the oil to 350°F (175°C).

3. **Prepare the Fish:**
– Pat the fish fillets dry with paper towels. Lightly season the fish with a bit of salt and pepper.
4. **Fry the Fish:**
– Dip each fish fillet into the batter, allowing any excess to drip off.
– Carefully place the battered fish fillets into the hot oil. Fry in batches if necessary to avoid overcrowding the pan.
– Fry the fish for 3-4 minutes on each side, or until the batter is golden brown and crispy, and the fish is cooked through.
5. **Drain and Serve:**
– Remove the fried fish fillets from the oil and place them on a paper towel-lined plate to drain any excess oil.
– Serve the crispy battered fish fillets with lemon wedges and garnish with fresh parsley if desired.
Enjoy your delicious, crispy battered fish fillets!
