Creamy Seasoned Corn
Ingredients:
– 4 ears of corn, cut into pieces
– 1/2 cup mayonnaise
– 1/2 cup sour cream
– 1/4 cup grated Parmesan cheese
– 2 tablespoons fresh lime juice
– 1 teaspoon chili powder
– 1/2 teaspoon smoked paprika
– 1/2 teaspoon garlic powder
– Salt and pepper to taste
– 2 tablespoons chopped fresh cilantro or parsley
– 1 tablespoon chopped chives (optional)
Instructions:
1. **Cook the Corn:**
– Bring a large pot of water to a boil.
– Add the corn pieces and cook for about 5-7 minutes or until tender.
– Drain the corn and let it cool slightly.
2. **Prepare the Sauce:**
– In a large mixing bowl, combine the mayonnaise, sour cream, Parmesan cheese, lime juice, chili powder, smoked paprika, garlic powder, salt, and pepper.
– Mix until all ingredients are well combined.
3. **Coat the Corn:**
– Add the cooked corn pieces to the bowl with the sauce.
– Toss the corn until each piece is evenly coated with the creamy sauce.
4. **Garnish and Serve:**
– Transfer the coated corn to a serving platter.
– Sprinkle with chopped cilantro or parsley and chopped chives if using.
