Creamy Seafood Chowder
Ingredients:
– 1 lb shrimp, peeled and deveined
– 1 lb fish fillets (such as cod or haddock), cut into bite-sized pieces
– 1/2 cup butter
– 1 medium onion, finely chopped
– 2 cloves garlic, minced
– 1/4 cup all-purpose flour
– 4 cups seafood or fish stock
– 1 cup heavy cream
– 2 cups milk
– 2 large potatoes, peeled and diced
– 1 cup corn kernels (fresh or frozen)
– 1 cup chopped celery
– 1/2 cup chopped carrots
– Salt and pepper to taste
– Fresh parsley, chopped for garnish
Instructions:
1. **Prepare the Seafood**:
– In a large pot, melt the butter over medium heat. Add the onions and cook until they are soft and translucent, about 5 minutes.
– Add the garlic and cook for another minute until fragrant.
2. **Make the Base**:
– Stir in the flour and cook for 2-3 minutes, stirring constantly, to create a roux.
– Slowly whisk in the seafood or fish stock, ensuring there are no lumps.
3. **Add Vegetables and Simmer**:
– Add the diced potatoes, corn, celery, and carrots to the pot. Bring the mixture to a simmer and cook until the vegetables are tender, about 15-20 minutes.
4. **Incorporate the Cream**:
– Stir in the heavy cream and milk, and bring the mixture back to a gentle simmer.
5. **Add the Seafood**:
– Add the shrimp and fish pieces to the pot. Cook for 5-7 minutes, or until the seafood is cooked through and opaque.
