Creamy Rice Pudding
**Ingredients:**
– 1/2 cup (100g) uncooked white rice (preferably medium or short grain)
– 2 cups (480ml) water
– 4 cups (960ml) whole milk
– 1/2 cup (100g) granulated sugar
– 1/4 teaspoon salt
– 1 teaspoon vanilla extract
– 1/2 teaspoon ground cinnamon (for garnish)
– Optional: 1/4 cup raisins or other dried fruit
**Instructions:**
1. **Cook the Rice:**
– In a medium saucepan, bring the water to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15 minutes, or until the rice is tender and most of the water is absorbed.
2. **Prepare the Pudding:**
– Add the milk, sugar, and salt to the cooked rice. Cook over medium heat, stirring frequently, until the mixture starts to thicken, about 20-25 minutes.
– If using, add raisins or other dried fruit during the last 5 minutes of cooking.
3. **Add Flavorings:**
– Remove the saucepan from the heat and stir in the vanilla extract.

4. **Serve:**
– Spoon the rice pudding into serving bowls. Sprinkle with ground cinnamon on top.
5. **Cool or Chill (Optional):**
– The rice pudding can be served warm or chilled, depending on your preference. If chilling, cover and refrigerate for at least 2 hours before serving.
