Creamy Chicken Spaghetti Recipe
Ingredients
- 8 oz spaghetti (or any pasta of choice)
- 2 tbsp butter or olive oil
- 1 lb boneless, skinless chicken breast, cubed
- 1 medium onion, diced
- 1/2 cup bell pepper, diced (green or red)
- 2 cloves garlic, minced
- 1 can (10.5 oz) cream of chicken soup
- 1 can (10.5 oz) cream of mushroom soup (or another can of cream of chicken)
- 1 1/2 cups chicken broth
- 1 cup shredded cheddar cheese (plus extra for topping)
- 1/2 cup shredded mozzarella cheese (optional)
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- Salt, to taste
- Chopped fresh parsley (for garnish, optional)
Instructions
- Cook the Pasta: Cook the spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
- Cook the Chicken: In a large skillet, heat the butter or olive oil over medium heat. Add the cubed chicken, season with a bit of salt and pepper, and cook until it’s no longer pink, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- Sauté the Vegetables: In the same skillet, add the diced onion, bell pepper, and minced garlic. Sauté for about 3-4 minutes, or until the vegetables are soft and fragrant.
- Add Soups and Broth: Stir in the cream of chicken soup, cream of mushroom soup, and chicken broth. Mix well to combine into a creamy sauce.
- Add Cheese and Seasoning: Add the shredded cheddar and mozzarella cheese, stirring until melted. Season the sauce with black pepper, garlic powder, and more salt if needed.
- Combine Everything: Add the cooked spaghetti and chicken to the skillet, stirring until everything is well-coated with the creamy sauce.
- Bake (Optional): For a baked version, transfer the mixture to a greased baking dish, sprinkle extra cheddar cheese on top, and bake in a preheated oven at 350°F (175°C) for 15-20 minutes or until bubbly.
- Serve: Garnish with chopped fresh parsley, if desired, and serve hot.
