 **Ingredients:**

– 8 oz (about 2 cups) pasta shells or other short pasta
– 1 lb ground beef or ground turkey
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 packet taco seasoning (or homemade taco seasoning)
– 1 (10 oz) can diced tomatoes with green chilies (Rotel)
– 1/2 cup beef broth or water
– 1/4 cup cream cheese, softened
– 1/2 cup sour cream
– 1 cup shredded cheddar cheese
– Fresh cilantro, chopped (for garnish)

 **Instructions:**

1. **Cook the Pasta:**
– Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

2. **Cook the Meat:**
– In a large skillet, brown the ground beef or turkey over medium-high heat until fully cooked. Drain any excess fat.
– Add the diced onion and garlic to the skillet and cook for 2-3 minutes, until softened.

3. **Add Seasoning and Tomatoes:**
– Stir in the taco seasoning and cook for about 1 minute.

– Stir in the sour cream until smooth and creamy.

5. **Combine with Pasta:**
– Add the cooked pasta to the skillet and stir to coat the pasta with the sauce.
– Sprinkle the shredded cheddar cheese over the top and stir until the cheese is melted and the sauce is evenly distributed.

6. **Serve:**
– Garnish with fresh cilantro and serve hot.
