Ingredients
- 1 lb ground beef
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 4 cups beef broth
- 2 cups water
- 1 cup elbow macaroni (or any small pasta)
- 1 cup heavy cream or half-and-half
- 1 tsp Italian seasoning
- 1/2 tsp smoked paprika
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese (optional, for extra creaminess)
- Chopped green onions or parsley, for garnish
Instructions
- Cook the Ground Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Once browned, drain any excess fat.
- Sauté the Vegetables: Add the diced onion, garlic, carrots, and celery to the pot with the beef. Sauté for 4-5 minutes, until the vegetables are softened.
- Add Broth and Pasta: Pour in the beef broth and water, and bring the mixture to a boil. Add the elbow macaroni, Italian seasoning, smoked paprika, salt, and pepper. Reduce the heat to a simmer and cook for about 10-12 minutes, or until the pasta is tender.
- Add Cream and Cheese: Stir in the heavy cream (or half-and-half) and shredded cheddar cheese (if using) until melted and creamy. Simmer for another 2-3 minutes, allowing the flavors to meld together. Adjust the seasoning with additional salt and pepper if needed.
- Serve: Ladle the soup into bowls and garnish with chopped green onions or parsley for a fresh finish.
