Creamy Beef and Macaroni Soup Recipe

Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 4 cups beef broth
  • 2 cups water
  • 1 cup elbow macaroni (or any small pasta)
  • 1 cup heavy cream or half-and-half
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese (optional, for extra creaminess)
  • Chopped green onions or parsley, for garnish

Instructions

  1. Cook the Ground Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks. Once browned, drain any excess fat.
  2. Sauté the Vegetables: Add the diced onion, garlic, carrots, and celery to the pot with the beef. Sauté for 4-5 minutes, until the vegetables are softened.
  3. Add Broth and Pasta: Pour in the beef broth and water, and bring the mixture to a boil. Add the elbow macaroni, Italian seasoning, smoked paprika, salt, and pepper. Reduce the heat to a simmer and cook for about 10-12 minutes, or until the pasta is tender.
  4. Add Cream and Cheese: Stir in the heavy cream (or half-and-half) and shredded cheddar cheese (if using) until melted and creamy. Simmer for another 2-3 minutes, allowing the flavors to meld together. Adjust the seasoning with additional salt and pepper if needed.
  5. Serve: Ladle the soup into bowls and garnish with chopped green onions or parsley for a fresh finish.

This Creamy Beef and Macaroni Soup is perfect for cozy days and is loved by both kids and adults. It’s rich, creamy, and packed with flavor, making it a satisfying one-pot meal. Enjoy!
