 Ingredients

**For the Pastry:**
– 1 package (2 sheets) puff pastry, thawed
– 1 egg, beaten (for egg wash)
– 1/4 cup granulated sugar

**For the Cream Filling:**
– 2 cups milk
– 1/2 cup granulated sugar
– 1/4 cup cornstarch
– 4 large egg yolks
– 1 teaspoon vanilla extract
– 1/4 cup unsalted butter
– 1 cup heavy cream, whipped

– Powdered sugar

 Instructions

1. **Preheat the oven** to 400°F (200°C). Line a baking sheet with parchment paper.

2. **Prepare the Pastry:**
– Roll out the puff pastry sheets on a lightly floured surface.
– Cut the pastry into strips, about 1-inch wide.
– Grease the cream horn molds or use aluminum foil molds.
– Wrap each strip around the mold, slightly overlapping the edges as you go.
– Place the wrapped molds on the prepared baking sheet.
– Brush with beaten egg and sprinkle with granulated sugar.

3. **Bake the Pastry:**
– Bake in the preheated oven for 12-15 minutes or until golden brown.
– Remove from the oven and let them cool for a few minutes before carefully removing the molds.
– Let the pastry cool completely on a wire rack.

4. **Prepare the Cream Filling:**
– In a medium saucepan, combine the milk and half of the sugar. Heat over medium heat until it starts to simmer.
– In a separate bowl, whisk together the remaining sugar, cornstarch, and egg yolks.
– Gradually pour the hot milk mixture into the egg yolk mixture, whisking constantly.
– Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and comes to a boil.
– Remove from heat and stir in the vanilla extract and butter until smooth.
– Pour the cream into a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and let it cool to room temperature.
– Once cooled, fold in the whipped cream.

5. **Assemble the Cream Horns:**
– Transfer the cream filling to a piping bag fitted with a star or round tip.
– Pipe the cream into the cooled pastry horns.

6. **Serve:**
– Dust with powdered sugar before serving.
