Ingredients:

– 1/2 head green cabbage, thinly sliced
– 1/2 head red cabbage, thinly sliced (optional)
– 2 large carrots, shredded
– 1 red onion, thinly sliced
– 1 bell pepper (red, yellow, or orange), thinly sliced (optional)
– 1/2 cup fresh parsley, chopped (optional)
– **For the Dressing:**
– 1/2 cup apple cider vinegar
– 1/4 cup olive oil
– 1/4 cup mayonnaise (optional for a creamier texture)
– 2 tablespoons Dijon mustard
– 2 tablespoons honey or maple syrup
– 1 teaspoon celery seeds (optional)
– Salt and pepper to taste
Instructions:
1. **Prepare the Vegetables:**
– Thinly slice the green cabbage and red cabbage (if using), carrots, red onion, and bell pepper.
– Combine all the sliced vegetables in a large mixing bowl. Add chopped parsley if using.
2. **Make the Dressing:**
– In a small bowl, whisk together the apple cider vinegar, olive oil, mayonnaise (if using), Dijon mustard, honey or maple syrup, celery seeds (if using), salt, and pepper.
3. **Combine:**
