Ingredients:

– 3-4 pounds beef chuck roast
– Salt and pepper to taste
– 2 tablespoons olive oil
– 1 large onion, chopped
– 4 cloves garlic, minced
– 4 cups beef broth
– 1 cup red wine (optional)
– 2 tablespoons tomato paste
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 4 large carrots, cut into chunks
– 4 medium potatoes, cut into chunks
– 2 stalks celery, cut into chunks
– 2 tablespoons cornstarch (optional, for thickening)
– 2 tablespoons water (optional, for thickening)
– Fresh parsley, chopped (for garnish)

 Instructions:

1. **Prepare the Meat:**
– Season the beef chuck roast generously with salt and pepper on all sides.

2. **Sear the Roast:**
– In a large Dutch oven or oven-safe pot, heat the olive oil over medium-high heat. Add the roast and sear on all sides until browned, about 4-5 minutes per side. Remove the roast and set aside.

3. **Sauté the Aromatics:**
– In the same pot, add the chopped onion and sauté for about 3 minutes until softened. Add the minced garlic and cook for another 1 minute until fragrant.

4. **Deglaze the Pot:**
– Add the red wine (if using) to the pot and scrape up any browned bits from the bottom. Let it simmer for 2 minutes to reduce slightly.

5. **Add the Broth and Seasonings:**
– Stir in the beef broth, tomato paste, thyme, and rosemary. Return the seared roast to the pot.

6. **Add the Vegetables:**
– Add the carrots, potatoes, and celery around the roast. Bring the liquid to a simmer.

7. **Braise the Roast:**
– Cover the pot with a lid and transfer it to a preheated oven at 325°F (165°C). Cook for 3-4 hours, or until the meat is tender and easily pulls apart with a fork.

8. **Thicken the Gravy (Optional):**
– If you prefer a thicker gravy, remove the roast and vegetables from the pot. Mix the cornstarch with water to create a slurry and stir it into the simmering liquid on the stovetop until it thickens.

9. **Serve:**
– Slice or shred the pot roast and serve it with the vegetables and gravy. Garnish with fresh parsley if desired.
