Classic Pickled Beets

Ingredients:

– 4 cups sliced beets (cooked and peeled)
– 1 cup white vinegar
– 1 cup water
– 1 cup sugar
– 1 cinnamon stick
– 1 tsp whole cloves
– 1 tsp whole allspice
– 1 tsp mustard seeds

 Instructions:

1. **Prepare Beets**: Cook beets until tender, then peel and slice them.
2. **Make Pickling Liquid**: In a saucepan, combine vinegar, water, sugar, and spices. Bring to a boil, then reduce heat and simmer for 5 minutes.
3. **Pickle Beets**: Pack the sliced beets into sterilized jars. Pour the hot pickling liquid over the beets, leaving about 1/2 inch of headspace.
4. **Seal Jars**: Wipe the rims of the jars, place lids on top, and screw on bands.
5. **Process Jars**: Process in a boiling water bath for 10 minutes.
6. **Store**: Allow jars to cool completely and store in a cool, dark place. Let the beets pickle for at least 2 weeks before eating for best flavor.
