Ingredients:

  • 2 cups cooked ham, finely chopped or ground
  • 2 hard-boiled eggs, chopped
  • 1/4 cup celery, finely diced
  • 1/4 cup onion, finely diced (optional)
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon sweet pickle relish
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • Crackers, for serving

1. Prepare the Ham:

  • If you have a food processor, you can pulse the cooked ham until it’s finely chopped. If you prefer a coarser texture, you can simply chop it by hand.

2. Mix the Salad:

  • In a large mixing bowl, combine the finely chopped ham, chopped hard-boiled eggs, diced celery, and diced onion (if using).

3. Add the Dressing:

  • In a separate small bowl, mix the mayonnaise, Dijon mustard (if using), sweet pickle relish, and lemon juice. Stir until well combined.

4. Combine and Season:

  • Pour the dressing over the ham mixture and stir until everything is evenly coated. Season with salt and pepper to taste. If the mixture seems too dry, you can add more mayonnaise.

5. Chill and Serve:

  • For best flavor, cover the ham salad and refrigerate for at least 1 hour before serving. This allows the flavors to meld together.
  • Serve chilled with crackers, as a sandwich filling, or on a bed of lettuce.

Optional Additions:

  • For a bit of sweetness, you can add chopped pineapple or apple to the salad.
  • For extra crunch, consider adding diced pickles or bell peppers.
