  • 1 1/2 cups (350ml) heavy cream, cold

  • 1 tablespoon powdered gelatin
  • 2 tablespoons water

  • 2 tablespoons vegetable oil (for smoothness)
  • 1/4 cup crushed nuts (hazelnuts or almonds work well)

Instructions:

  1. Prepare the Chocolate Mousse:
    • In a small bowl, combine the gelatin and water and let it sit for 5 minutes to bloom.
    • In a saucepan, heat the milk until just before it boils. Remove from heat and add the bloomed gelatin, stirring until fully dissolved.
    • Add the chopped chocolate to the warm milk and stir until the chocolate is completely melted and smooth.
    • Allow the chocolate mixture to cool slightly.
    • In a mixing bowl, whip the cold heavy cream until soft peaks form.

    • Once the mousse has set, melt the chocolate and vegetable oil together in a microwave or double boiler until smooth.
    • Stir in the crushed nuts for extra texture.
  4. Coat the Mousse Cake:
    • Carefully remove the mousse from the mold and place it on a wire rack over a baking sheet.
    • Pour the melted chocolate coating over the mousse, ensuring it covers the entire surface. Let any excess chocolate drip off.
    • Allow the chocolate coating to set. You can speed this up by placing the cake in the refrigerator for a few minutes.
  5. Serve:
    • Once the coating is firm, slice and serve the cake.
