German Brötchen (Classic Crusty Rolls)

These traditional German Brötchen are crispy on the outside and soft and fluffy on the inside. They are a staple of German breakfasts and are perfect served warm with butter, jam, cheese, or cold cuts. With simple ingredients and a classic baking method, these homemade rolls bring authentic bakery flavor right to your kitchen.

Ingredients

  • 500 g wheat flour (Type 550 or all-purpose flour)

  • 7 g dry yeast

  • 10 g salt

  • 1 tsp sugar

  • 300 ml lukewarm water

Directions

  1. Mix the Dry Ingredients
    In a large bowl, combine the flour and salt.

  2. Activate the Yeast
    In another bowl, dissolve the yeast and sugar in lukewarm water. Let it sit for about 5 minutes until slightly foamy.

  3. Prepare the Dough
    Add the yeast mixture to the flour and mix until a dough forms.

  4. Knead the Dough
    Knead the dough for 8–10 minutes until smooth and elastic.

  5. First Rise
    Cover the bowl and let the dough rise in a warm place for 1 hour, or until doubled in size.

  6. Shape the Rolls
    Divide the dough into 8 equal pieces and shape each into a round roll.

  7. Second Rise
    Place the rolls on a baking sheet lined with parchment paper and let them rise for 30 minutes.

  8. Score the Tops
    Use a sharp knife or razor to make a small cross or slash on top of each roll.

  9. Bake
    Bake in a preheated oven at 220°C (425°F) for 18–20 minutes, until golden brown and crispy.
