German Brötchen (Classic Crusty Rolls)
These traditional German Brötchen are crispy on the outside and soft and fluffy on the inside. 500 g wheat flour (Type 550 or all-purpose flour)

7 g dry yeast

10 g salt

1 tsp sugar

300 ml lukewarm water

Mix the Dry Ingredients
In a large bowl, combine the flour and salt. -
Activate the Yeast
In another bowl, dissolve the yeast and sugar in lukewarm water. Let it sit for about 5 minutes until slightly foamy. -
Prepare the Dough
Add the yeast mixture to the flour and mix until a dough forms. -
Knead the Dough
Knead the dough for 8–10 minutes until smooth and elastic. -
First Rise

Shape the Rolls
Divide the dough into 8 equal pieces and shape each into a round roll. -
Second Rise
Place the rolls on a baking sheet lined with parchment paper and let them rise for 30 minutes. -
Score the Tops
Use a sharp knife or razor to make a small cross or slash on top of each roll. -
Bake
Bake in a preheated oven at 220°C (425°F) for 18–20 minutes, until golden brown and crispy.
