Chocolate-Covered Crunchy Treats
Ingredients:
– 2 cups cornflakes or rice crisps
– 1 cup roasted peanuts, roughly chopped
– 1 cup creamy peanut butter
– 1/2 cup honey
– 1/4 cup butter
– 2 cups chocolate chips (milk or dark chocolate, according to preference)
– 1 tablespoon vegetable oil
Instructions:
1. **Prepare the Base:**
– In a large mixing bowl, combine the cornflakes or rice crisps and chopped peanuts. Set aside.
2. **Make the Peanut Butter Mixture:**
– In a saucepan over medium heat, combine the peanut butter, honey, and butter.
– Stir continuously until the mixture is smooth and well combined.

3. **Combine and Shape:**
– Pour the peanut butter mixture over the cornflakes and peanuts.
– Mix well until all the dry ingredients are evenly coated.
– Using a tablespoon, scoop out portions of the mixture and shape them into small, oval mounds. Place them on a baking sheet lined with parchment paper.
– Refrigerate for about 30 minutes or until firm.
4. **Prepare the Chocolate Coating:**
– In a microwave-safe bowl, combine the chocolate chips and vegetable oil.
– Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
5. **Coat the Treats:**
– Dip each mound into the melted chocolate, making sure it is completely covered.
– Place the coated treats back on the parchment-lined baking sheet.
– Refrigerate again for about 1 hour or until the chocolate coating is set.
6. **Serve:**
– Once the chocolate is set, remove the treats from the refrigerator and let them come to room temperature before serving.
– Store any leftovers in an airtight container in the refrigerator.
