Cherry Cheesecake Recipe
Ingredients:
**For the crust:**
– 1 1/2 cups graham cracker crumbs
– 1/4 cup granulated sugar
– 1/2 cup unsalted butter, melted
**For the filling:**
– 4 packages (8 oz each) cream cheese, softened
– 1 cup granulated sugar
– 1 teaspoon vanilla extract
– 4 large eggs
– 1 cup sour cream
**For the topping:**
– 1 can (21 oz) cherry pie filling
Instructions:
1. **Prepare the crust:**
– Preheat the oven to 325°F (163°C).
– In a medium bowl, combine the graham cracker crumbs and sugar. Add the melted butter and mix until well combined.
– Press the mixture into the bottom of a 9-inch springform pan. Use the back of a spoon to pack it tightly.
– Bake the crust for 10 minutes, then set aside to cool.
2. **Prepare the filling:**
– In a large bowl, beat the cream cheese until smooth and creamy.
– Add the sugar and vanilla extract, and beat until well combined.
– Add the eggs one at a time, beating well after each addition.
– Stir in the sour cream until smooth.
– Pour the filling over the crust in the springform pan.
3. **Bake the cheesecake:**
– Bake for 55-65 minutes, or until the center is set and the edges are lightly golden.
– Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
– Remove from the oven and allow to cool to room temperature, then refrigerate for at least 4 hours or overnight.

4. **Add the topping:**
– Once the cheesecake is fully chilled, spoon the cherry pie filling over the top, spreading it out evenly.

– Carefully remove the sides of the springform pan, slice the cheesecake, and serve chilled.
