Cheesy Potato Puffs
**Ingredients:**
– 2 cups mashed potatoes (leftovers work great)
– 1 cup shredded cheddar cheese (or your favorite cheese)
– 1/4 cup grated Parmesan cheese
– 2 large eggs
– 1/4 cup all-purpose flour
– 2 tablespoons chopped chives or green onions (optional)
– Salt and pepper to taste
– Cooking spray or oil for greasing
**Instructions:**
1. **Preheat the Oven:** Preheat your oven to 400°F (200°C). Grease a muffin tin or mini muffin tin with cooking spray or oil.
2. **Prepare the Mixture:** In a large bowl, mix the mashed potatoes, shredded cheddar cheese, grated Parmesan, eggs, flour, chives (if using), salt, and pepper. Stir until well combined.
3. **Fill the Muffin Tin:** Spoon the mixture into the prepared muffin tin, filling each cup about 3/4 full. If desired, you can sprinkle a little extra cheese on top for a golden crust.

4. **Bake:** Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and crispy.
