Cheesy Potato Puffs
**Ingredients:**
– 2 cups mashed potatoes (leftover or freshly made)
– 1 cup shredded cheddar cheese
– 1/2 cup grated Parmesan cheese
– 1/4 cup sour cream
– 2 large eggs
– 1/4 cup chopped chives or green onions
– Salt and pepper to taste
– 1/4 teaspoon garlic powder (optional)
– Cooking spray or melted butter for greasing the muffin tin
**Instructions:**
1. **Preheat Oven:** Preheat your oven to 400°F (200°C). Grease a mini muffin tin with cooking spray or melted butter.
2. **Prepare Mixture:** In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, sour cream, eggs, chives or green onions, salt, pepper, and garlic powder. Mix well until all ingredients are thoroughly combined.
3. **Fill Muffin Tin:** Spoon the potato mixture into the greased mini muffin tin, filling each cup to the top and packing them down slightly.

4. **Bake:** Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the potato puffs are set.
