Cheesy Potato Patties with Herbs

Ingredients:
- 4 medium potatoes, peeled and boiled
- 1/2 cup shredded mozzarella or cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh parsley, chopped
- 2 green onions, chopped (optional)
- Salt and pepper, to taste
- 1/4 teaspoon garlic powder (optional)
- 1 egg
- 1/4 cup all-purpose flour
- 2-3 tablespoons vegetable oil, for frying
For the Creamy Sauce:
- 1/2 cup sour cream or Greek yogurt
- 1 tablespoon fresh dill or parsley, chopped
- 1 clove garlic, minced
- Salt and pepper, to taste
Instructions:
- Prepare the Potato Mixture:
- In a large mixing bowl, mash the boiled potatoes until smooth.
- Add the shredded mozzarella (or cheddar), Parmesan, parsley, green onions, salt, pepper, and garlic powder (if using). Mix well.
- Add the egg and flour to the potato mixture and mix until everything is well combined.
- Form the Patties:
- Take a small portion of the potato mixture and shape it into a patty, about 1/2 inch thick. Repeat with the remaining mixture.
- Cook the Patties:
- Heat vegetable oil in a non-stick skillet over medium heat.
- Place the potato patties in the skillet and cook for 3-4 minutes per side, or until golden brown and crispy. Cook in batches if necessary to avoid overcrowding the pan.
- Make the Creamy Sauce:
- In a small bowl, combine sour cream (or Greek yogurt), chopped dill or parsley, minced garlic, salt, and pepper. Mix well.
- Serve:
- Serve the hot and crispy potato patties with the creamy sauce on the side.
