Cheesy Potato Patties
Ingredients:
– 3 large potatoes, peeled and grated
– 1 cup shredded cheddar cheese
– 1/4 cup grated Parmesan cheese
– 1/4 cup finely chopped green onions
– 1 large egg, beaten
– 1/4 cup all-purpose flour
– Salt and pepper to taste
– Vegetable oil for frying
Instructions:
1. **Prepare Potatoes**: Place the grated potatoes in a large bowl of cold water and let sit for 5 minutes. Drain and squeeze out as much moisture as possible using a clean kitchen towel.
2. **Mix Ingredients**: In a large bowl, combine the grated potatoes, cheddar cheese, Parmesan cheese, green onions, beaten egg, and flour. Mix well. Season with salt and pepper to taste.
3. **Form Patties**: Divide the mixture into equal portions and shape them into patties.
4. **Heat Oil**: Heat about 1/4 inch of vegetable oil in a large skillet over medium heat.
