Cheesy Jalapeño Poppers
Ingredients:
- 10–12 fresh jalapeños, halved and seeds removed
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/4 cup finely chopped green onions (optional)
- Salt and pepper, to taste
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko breadcrumbs for extra crispiness)
- Oil, for frying
Instructions:
- Prepare the Filling:
- In a mixing bowl, combine the cream cheese, shredded cheddar cheese, green onions, salt, and pepper.
- Mix until well combined.
- Stuff the Jalapeños:
- Spoon the cheese mixture into each jalapeño half, pressing it in firmly so it’s well-filled.
- Bread the Poppers:
- Place the flour, beaten eggs, and breadcrumbs in separate shallow bowls.
- Dip each stuffed jalapeño half in flour, shaking off excess.
- Then dip it in the beaten egg, and finally, coat it with breadcrumbs.
- For extra crunch, you can dip it again in egg and breadcrumbs for a double layer.
- Fry the Poppers:
- Heat oil in a deep frying pan or pot to 350°F (175°C).
- Fry the poppers in batches for 2-3 minutes, or until golden brown and crispy.
- Remove and place them on a paper towel-lined plate to drain excess oil.
- Serve:
- Serve warm with a side of ranch or your favorite dipping sauce.
