Cheesy Jalapeño Poppers

 

 

 

Ingredients:

  • 10–12 fresh jalapeños, halved and seeds removed
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup finely chopped green onions (optional)
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko breadcrumbs for extra crispiness)
  • Oil, for frying

Instructions:

  1. Prepare the Filling:
    • In a mixing bowl, combine the cream cheese, shredded cheddar cheese, green onions, salt, and pepper.
    • Mix until well combined.
  2. Stuff the Jalapeños:
    • Spoon the cheese mixture into each jalapeño half, pressing it in firmly so it’s well-filled.
  3. Bread the Poppers:
    • Place the flour, beaten eggs, and breadcrumbs in separate shallow bowls.
    • Dip each stuffed jalapeño half in flour, shaking off excess.
    • Then dip it in the beaten egg, and finally, coat it with breadcrumbs.
    • For extra crunch, you can dip it again in egg and breadcrumbs for a double layer.
  4. Fry the Poppers:
    • Heat oil in a deep frying pan or pot to 350°F (175°C).
    • Fry the poppers in batches for 2-3 minutes, or until golden brown and crispy.
    • Remove and place them on a paper towel-lined plate to drain excess oil.
  5. Serve:
    • Serve warm with a side of ranch or your favorite dipping sauce.
