Cheesy Garlic Potatoes in Foil
Ingredients:
– 4 large russet potatoes, sliced into 1/4-inch rounds
– 2 tablespoons olive oil or melted butter
– 3 cloves garlic, minced
– 1 1/2 cups shredded cheese (cheddar, mozzarella, or a mix)
– Salt and pepper to taste
– 1/4 cup chopped fresh parsley (or 1 teaspoon dried parsley)
– Aluminum foil
Instructions:
1. **Prepare the Potatoes:**
– Preheat your grill to medium-high heat or your oven to 400°F (200°C).
– In a large bowl, toss the potato slices with olive oil or melted butter, minced garlic, salt, and pepper until evenly coated.
2. **Assemble the Foil Packets:**
– Tear off large pieces of aluminum foil (about 12×18 inches) and lay them flat.
– Place a portion of the seasoned potato slices in the center of each piece of foil.
– Sprinkle a generous amount of shredded cheese over the potatoes.
– Fold the foil over the potatoes, sealing the edges to create a packet. Make sure the packets are sealed well to trap in steam.
3. **Cook the Potatoes:**
– **Grill:** Place the foil packets on the preheated grill and cook for 20-25 minutes, flipping halfway through, until the potatoes are tender and the cheese is melted.
– **Oven:** Place the foil packets on a baking sheet and bake in the preheated oven for 25-30 minutes, until the potatoes are tender and the cheese is melted.
4. **Serve:**
– Carefully open the foil packets (watch out for steam!) and sprinkle with chopped parsley before serving.
– Serve hot as a side dish to your favorite grilled meats or as a standalone snack.
