Cheesy Broccoli and Cauliflower Casserole
Ingredients:
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups milk (warm)
- 1 cup cheddar cheese (shredded)
- 1/4 cup Parmesan cheese (grated)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 2 tablespoons butter (melted)
- Fresh thyme or parsley (optional, for garnish)
Instructions:
- Preheat the oven:
- Preheat your oven to 375°F (190°C).
- Prepare the vegetables:
- Bring a large pot of salted water to a boil.
- Add the broccoli and cauliflower florets and cook for 3-4 minutes until slightly tender but not fully cooked.
- Drain and set aside.
- Make the cheese sauce:
- In a medium saucepan, melt 2 tablespoons of butter over medium heat.
- Whisk in the flour and cook for 1 minute, stirring constantly.
- Gradually whisk in the warm milk and cook until the mixture thickens.
- Stir in the cheddar cheese, Parmesan cheese, garlic powder, onion powder, salt, and pepper until the cheese is melted and smooth.
- Assemble the casserole:
- Place the broccoli and cauliflower florets in a greased 8×8-inch baking dish.
- Pour the cheese sauce evenly over the vegetables, ensuring they are well coated.
- Add the topping:
- In a small bowl, mix the breadcrumbs with the melted butter.
- Sprinkle the breadcrumb mixture over the casserole.
- Bake the casserole:
- Bake for 20-25 minutes, or until the topping is golden brown and the cheese sauce is bubbling.
- Garnish and serve:
- Sprinkle fresh thyme or parsley over the top before serving, if desired.
