 Cheesy Bread Recipe (Khachapuri Style)

Ingredients:

– 2 cups all-purpose flour
– 1/2 teaspoon salt
– 1/2 teaspoon sugar
– 1/2 teaspoon instant yeast
– 3/4 cup warm water
– 1/4 cup plain yogurt
– 1/4 cup vegetable oil
– 1 cup shredded mozzarella cheese
– 1/2 cup crumbled feta cheese
– 1/2 cup shredded cheddar cheese
– 1 egg (optional, for glazing)
– 2 tablespoons melted butter (for brushing)

 Instructions:

1. **Prepare the Dough:**
– In a large bowl, combine the flour, salt, sugar, and yeast.
– Add the warm water, yogurt, and vegetable oil. Mix until the dough comes together.
– Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic.
– Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

2. **Prepare the Filling:**
– In a medium bowl, combine the mozzarella, feta, and cheddar cheeses. Mix well.

3. **Assemble the Bread:**
– Preheat your oven to 400°F (200°C).
– Punch down the dough and divide it into two equal parts.
– Roll each part into an oval shape on a floured surface.
– Place half of the cheese mixture in the center of each oval, spreading it out but leaving a border around the edges.
– Fold the edges of the dough over the filling, leaving the center exposed, and pinch the edges to seal.

4. **Bake:**
– Place the prepared breads on a baking sheet lined with parchment paper.
– If desired, beat the egg and brush it over the edges of the dough for a glossy finish.
– Bake in the preheated oven for about 15-20 minutes or until the crust is golden brown and the cheese is melted and bubbly.

5. **Finish:**
– Remove the breads from the oven and immediately brush the edges with melted butter.
– Allow to cool slightly before slicing and serving.
