 Cheesy Beef and Vegetable Casserole

Ingredients:

 

– 1 lb ground beef
– 1 medium onion, chopped
– 1 bell pepper, chopped
– 2 cloves garlic, minced
– 3 cups diced potatoes
– 1 can (14.5 oz) diced tomatoes, drained
– 1 cup corn kernels (fresh, canned, or frozen)
– 1 cup shredded carrots
– 1 cup peas (fresh, canned, or frozen)
– 2 cups shredded cheddar cheese
– 1 tsp salt
– 1/2 tsp black pepper
– 1 tsp paprika
– 1 tsp dried oregano
– 1/2 tsp chili powder (optional)
– Fresh parsley, chopped (for garnish)

Instructions:

1. Preheat your oven to 375°F (190°C).
2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
3. Add the chopped onion, bell pepper, and garlic to the skillet. Cook until the vegetables are tender, about 5 minutes.
4. Stir in the diced potatoes, tomatoes, corn, carrots, and peas. Cook for an additional 5-7 minutes.
5. Season with salt, black pepper, paprika, oregano, and chili powder (if using). Mix well.
6. Transfer the mixture to a greased baking dish.
7. Sprinkle the shredded cheddar cheese evenly over the top.
8. Cover the dish with aluminum foil and bake for 25 minutes.
9. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
10. Garnish with fresh parsley before serving.
