Ingredients:

  • 1 lb (450g) rigatoni pasta
  • 1 tbsp olive oil
  • 1 lb (450g) ground beef (or Italian sausage, if preferred)
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1/2 tsp red pepper flakes (optional, for a bit of heat)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley or basil for garnish, chopped

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Cook the Pasta:
    • Bring a large pot of salted water to a boil and cook the rigatoni according to package instructions until al dente. Drain and set aside.
  3. Prepare the Meat Sauce:
    • In a large skillet, heat the olive oil over medium heat. Add the ground beef, breaking it up with a spoon, and cook until browned. Drain any excess fat if necessary.
    • Add the chopped onion and cook until softened. Add garlic and cook for another minute until fragrant.
    • Stir in the crushed tomatoes, tomato paste, Italian seasoning, salt, pepper, and red pepper flakes if using. Let the sauce simmer for about 10 minutes, allowing the flavors to blend.
  4. Combine the Pasta and Sauce:
    • In a large mixing bowl, combine the cooked rigatoni with the meat sauce. Mix well to ensure the pasta is evenly coated with the sauce.
  5. Assemble the Bake:
    • Transfer the pasta mixture to a large baking dish. Sprinkle the Parmesan cheese over the top, followed by an even layer of mozzarella cheese.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
  7. Garnish and Serve:
    • Remove from the oven and let the dish sit for a few minutes. Garnish with fresh parsley or basil before serving.
