Cheesy Baked Rigatoni with Ground Beef
Ingredients:
- 1 lb (450g) rigatoni pasta
- 1 tbsp olive oil
- 1 lb (450g) ground beef (or Italian sausage, if preferred)
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 tbsp tomato paste
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1/2 tsp red pepper flakes (optional, for a bit of heat)
- 2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley or basil for garnish, chopped
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Cook the Pasta:
- Bring a large pot of salted water to a boil and cook the rigatoni according to package instructions until al dente. Drain and set aside.
- Prepare the Meat Sauce:
- In a large skillet, heat the olive oil over medium heat. Add the ground beef, breaking it up with a spoon, and cook until browned. Drain any excess fat if necessary.
- Add the chopped onion and cook until softened. Add garlic and cook for another minute until fragrant.
- Stir in the crushed tomatoes, tomato paste, Italian seasoning, salt, pepper, and red pepper flakes if using. Let the sauce simmer for about 10 minutes, allowing the flavors to blend.
- Combine the Pasta and Sauce:
- In a large mixing bowl, combine the cooked rigatoni with the meat sauce. Mix well to ensure the pasta is evenly coated with the sauce.
- Assemble the Bake:
- Transfer the pasta mixture to a large baking dish. Sprinkle the Parmesan cheese over the top, followed by an even layer of mozzarella cheese.
- Bake:
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted, bubbly, and slightly golden on top.
- Garnish and Serve:
- Remove from the oven and let the dish sit for a few minutes. Garnish with fresh parsley or basil before serving.
