Ingredients:
– 4 large potatoes
– 1 cup shredded mozzarella cheese
– 1 cup shredded cheddar cheese
– 2 tablespoons olive oil
– Salt and pepper to taste
– 2 tablespoons fresh parsley, chopped
Instructions:
1. **Preheat Oven**: Preheat your oven to 400°F (200°C).
2. **Prepare Potatoes**: Wash and peel the potatoes. Cut them into thick slices, about 1/2 inch thick.
