Cheese-Stuffed Mushrooms
Ingredients:
- 12 large mushroom caps
- 1 cup ground beef or sausage (cooked and crumbled)
- 1/2 cup onion (finely diced)
- 2 cloves garlic (minced)
- 1/2 cup breadcrumbs
- 1/2 cup cream cheese (softened)
- 1/2 cup mozzarella cheese (shredded)
- 1/4 cup Parmesan cheese (grated)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil (for brushing)
- Fresh parsley (chopped, for garnish)
Instructions:
- Preheat the oven:
- Preheat your oven to 375°F (190°C).
- Prepare the mushrooms:
- Clean the mushroom caps and remove the stems. Set the caps aside.
- Finely chop the stems and set them aside for the stuffing.
- Cook the filling:
- Heat a skillet over medium heat and sauté the chopped mushroom stems, onion, and garlic in a bit of olive oil until softened.
- Add the cooked ground beef or sausage, breadcrumbs, Italian seasoning, salt, and pepper. Mix well.
- Combine the stuffing:
- In a bowl, combine the sautéed mixture with cream cheese, Parmesan cheese, and half of the mozzarella. Stir until creamy.
- Stuff the mushrooms:
- Brush the mushroom caps lightly with olive oil.
- Spoon the stuffing mixture into each mushroom cap, mounding slightly.
- Bake:
- Arrange the stuffed mushrooms on a baking sheet lined with parchment paper.
- Sprinkle the remaining mozzarella on top of the mushrooms.
- Bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
- Garnish and serve:
- Remove the mushrooms from the oven and garnish with freshly chopped parsley.
- Serve warm as an appetizer or side dish.
