Cabbage and Ground Meat Soup
Ingredients:
– 1 pound ground beef
– 1 medium onion, chopped
– 3 cloves garlic, minced
– 4 cups beef broth
– 4 cups water
– 1 small head of cabbage, chopped
– 3 large carrots, sliced
– 3 celery stalks, sliced
– 1 can diced tomatoes (14.5 oz)
– 1 teaspoon dried thyme
– 1 teaspoon dried basil
– 1 bay leaf
– Salt and pepper to taste
Instructions:
1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
2. Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent.
3. Pour in the beef broth and water, and bring to a boil.
4. Add the chopped cabbage, sliced carrots, sliced celery, and canned diced tomatoes to the pot.
5. Stir in the dried thyme, dried basil, and bay leaf.
6. Reduce the heat to a simmer and cook for 30-40 minutes, or until the vegetables are tender.
7. Season with salt and pepper to taste.
8. Remove the bay leaf before serving.
