Ingredients:

  • 4 cups fresh broccoli florets, cut into bite-sized pieces
  • 1/2 cup shredded carrots
  • 1/4 cup red onion, finely chopped
  • 1/4 cup red cabbage, thinly sliced (optional for extra color)
  • 1/4 cup dried cranberries or raisins (optional)
  • 1/4 cup sunflower seeds or chopped almonds
  • 1/2 cup cheddar cheese, shredded (optional)

For the Dressing:

  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or sugar
  • Salt and pepper to taste

Instructions:

  1. Prepare the Vegetables:
    • In a large bowl, combine the broccoli florets, shredded carrots, chopped red onion, and red cabbage if using.
    • Add the dried cranberries (or raisins) and sunflower seeds (or almonds).
  2. Make the Dressing:
    • In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey (or sugar), salt, and pepper until smooth and well combined.
  3. Combine the Salad:
    • Pour the dressing over the broccoli mixture and toss until everything is evenly coated.
    • If using, gently fold in the shredded cheddar cheese.
  4. Chill and Serve:
    • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld together.
    • Serve chilled, garnished with extra sunflower seeds or cranberries if desired.
