Ingredients:

    • 2 tbsp olive oil

    • 2 carrots, peeled and sliced

    • 2 bay leaves
  • For the Mashed Potatoes:
    • 2 lbs potatoes, peeled and quartered
    • 1/2 cup milk
    • 4 tbsp butter
    • Salt and pepper, to taste
  • For the Gravy:
    • 2 cups beef cooking liquid from the braised beef
    • 2 tbsp cornstarch
    • 2 tbsp water
  • Garnish:
    • Fresh thyme
    • Salt and freshly ground black pepper

Instructions:

  1. Braise the Beef:
    • Season the beef chunks with salt and pepper.
    • In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef and sear on all sides until browned. Remove and set aside.
    • In the same pot, add onions, carrots, and garlic. Cook until softened, about 5 minutes.
