 **Beef Tenderloin**

 Ingredients:

– **Beef tenderloin roast**: 3-4 lbs (1.4-1.8 kg), trimmed
– **Olive oil**: 2 tablespoons
– **Garlic**: 4 cloves, minced
– **Fresh rosemary**: 2 tablespoons, chopped
– **Fresh thyme**: 2 tablespoons, chopped
– **Dijon mustard**: 2 tablespoons
– **Salt**: 1 1/2 teaspoons
– **Black pepper**: 1 teaspoon
– **Butter**: 2 tablespoons, melted
– **Beef broth or red wine**: 1/2 cup (optional, for deglazing the pan)

 Instructions:

1. **Prepare the Beef:**
– Preheat your oven to 425°F (220°C).
– Pat the beef tenderloin dry with paper towels and tie it with kitchen twine at 1-inch intervals to ensure even cooking.

2. **Season the Beef:**
– In a small bowl, combine the minced garlic, chopped rosemary, thyme, Dijon mustard, salt, pepper, olive oil, and melted butter. Mix until well combined.
– Rub the herb mixture all over the beef tenderloin, ensuring it’s evenly coated.

3. **Sear the Beef:**
– Heat a large oven-safe skillet or roasting pan over medium-high heat. Add a little olive oil to the pan.
– Sear the beef tenderloin on all sides until it’s browned, about 2-3 minutes per side.

4. **Roast the Beef:**
– Once seared, transfer the skillet or roasting pan to the preheated oven.
– Roast the beef for about 20-30 minutes, or until it reaches your desired level of doneness. Use a meat thermometer to check the internal temperature:
– **Rare**: 120°F (49°C)
– **Medium-rare**: 130°F (54°C)
– **Medium**: 140°F (60°C)
– Once done, remove the beef from the oven and transfer it to a cutting board. Tent with foil and let it rest for 10-15 minutes.

5. **Make the Sauce (Optional):**
– While the beef is resting, place the skillet back on the stovetop over medium heat. Deglaze the pan with beef broth or red wine, scraping up any browned bits from the bottom.
– Simmer the sauce for a few minutes until it reduces slightly. Season with salt and pepper to taste.

6. **Serve:**
– Slice the beef tenderloin into 1/2-inch thick slices. Arrange the slices on a serving platter.
– Drizzle the sauce over the beef, or serve it on the side.

This **Herb-Crusted Beef Tenderloin** is perfect for special occasions or holiday dinners. It’s tender, flavorful, and pairs well with roasted vegetables, mashed potatoes, or a fresh salad. Enjoy! If you have any more recipe requests or questions, feel free to ask.
