Ingredients:
– 1 lb (450g) beef stew meat or sirloin, cut into 1-inch cubes
– 1 lb (450g) baby potatoes, halved
– 2 tbsp olive oil
– 2 cloves garlic, minced
– 1 tsp dried rosemary
– 1 tsp dried thyme
– 1 tsp paprika
– Salt and pepper, to taste
– Fresh parsley, chopped (for garnish)
– Aluminum foil
Instructions:
1. **Preheat Oven**:
– Preheat your oven to 400°F (200°C) or preheat a grill to medium-high heat.
2. **Prepare the Ingredients**:
– In a large bowl, combine the beef cubes, halved potatoes, olive oil, minced garlic, rosemary, thyme, paprika, salt, and pepper. Toss to coat everything evenly.
3. **Assemble the Foil Packets**:
– Tear off four large pieces of aluminum foil, about 12×18 inches each. Divide the beef and potato mixture evenly among the foil pieces, placing it in the center of each.
– Fold the sides of the foil over the beef and potatoes, covering completely and sealing the packets tightly to ensure no steam escapes.
4. **Cook**:
– Place the foil packets on a baking sheet and bake in the preheated oven for 30-35 minutes, or until the beef is cooked through and the potatoes are tender.
– If grilling, place the packets on the grill and cook for 25-30 minutes, flipping halfway through.
