Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons melted butter or vegetable oil
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, sliced
  • Additional butter or oil for cooking

Instructions:

  1. Mix Dry Ingredients:
    • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. Add Wet Ingredients:
    • In another bowl, beat together the milk, egg, melted butter, and vanilla extract.
    • Pour the wet ingredients into the dry ingredients and stir until just combined. The batter should still have some lumps.
  3. Prepare Bananas:
    • Slice the bananas into rounds.
  4. Cook Pancakes:
    • Heat a non-stick skillet or griddle over medium heat and brush with a little butter or oil.
    • Place banana slices in the skillet and pour some batter over each slice, enough to cover them.
    • Cook for about 2-3 minutes or until bubbles form on the surface of the pancake and the edges look set.
    • Flip carefully and cook for another 2-3 minutes on the other side until golden brown.
  5. Serve:
    • Serve the pancakes hot with your choice of syrup, honey, or additional fresh banana slices.
