Baked Pork Chops with Potatoes and Cheese

 

**Ingredients:**

– 4-6 bone-in pork chops
– 4 large potatoes, thinly sliced
– 1 cup shredded cheddar cheese
– 1 cup heavy cream
– 1 cup chicken broth
– 1 medium onion, thinly sliced
– 3 cloves garlic, minced
– 2 tablespoons olive oil
– 2 tablespoons butter
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)

**Instructions:**

1. **Preheat Oven:**
– Preheat your oven to 375°F (190°C).

2. **Prepare Potatoes:**
– Grease a baking dish with butter. Layer the thinly sliced potatoes and onions in the dish, seasoning each layer with salt and pepper.

3. **Prepare Sauce:**
– In a small saucepan, heat the olive oil over medium heat. Add minced garlic and cook until fragrant. Add the heavy cream and chicken broth, bringing the mixture to a simmer. Stir in the shredded cheddar cheese until melted and smooth.

4. **Layering:**
– Pour half of the cheese sauce over the layered potatoes and onions.

5. **Sear Pork Chops:**
– In a large skillet, heat the butter over medium-high heat. Season the pork chops with salt and pepper. Sear the pork chops for about 2-3 minutes on each side, until they are nicely browned.

6. **Assemble:**
– Place the seared pork chops on top of the potatoes in the baking dish. Pour the remaining cheese sauce over the pork chops and potatoes.

7. **Bake:**
– Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the pork chops are cooked through and the potatoes are tender.

– Remove from the oven and let it rest for a few minutes. Garnish with chopped fresh parsley before serving.
