Baked Garlic Butter Chicken Thighs
Ingredients:
– 4-6 bone-in, skin-on chicken thighs
– Salt and pepper to taste
– 2 tablespoons olive oil
– 4 cloves garlic, minced
– 1/4 cup chicken broth
– 1/4 cup dry white wine (optional)
– 1/4 cup unsalted butter, melted
– 1 tablespoon fresh lemon juice
– 1 teaspoon Italian seasoning
– Fresh parsley, chopped (for garnish)
Instructions:
1. **Preheat the Oven:**
Preheat your oven to 375°F (190°C).
2. **Season the Chicken:**
Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
3. **Sear the Chicken:**
Heat the olive oil in a large oven-safe skillet over medium-high heat. Place the chicken thighs, skin side down, in the skillet and cook until the skin is golden brown and crispy, about 5-7 minutes. Flip the chicken thighs and cook for an additional 3-4 minutes. Remove the chicken from the skillet and set aside.
4. **Prepare the Sauce:**
In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute. Pour in the chicken broth and white wine (if using), scraping up any browned bits from the bottom of the skillet. Stir in the melted butter, lemon juice, and Italian seasoning.

5. **Bake the Chicken:**
Return the chicken thighs to the skillet, skin side up, and spoon some of the sauce over the top. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
6. **Garnish and Serve:**
Remove the skillet from the oven and let the chicken rest for a few minutes. Garnish with fresh parsley before serving.
