Bacon-Wrapped Meatloaf with Roasted Potatoes
Ingredients:
For the Meatloaf:
- 1 pound (500g) ground beef or a mix of beef and pork
- 1/2 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup milk
- 1 egg
- 1 small onion, finely diced
- 1 small carrot, finely diced or grated
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried Italian herbs
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 6–8 slices of bacon
For the Roasted Potatoes:
- 4 medium potatoes, cut into wedges
- 1 cup mushrooms, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley or chives for garnish
Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Meatloaf:
- In a large mixing bowl, combine ground beef, breadcrumbs, Parmesan, milk, egg, onion, carrot, garlic, Worcestershire sauce, herbs, salt, and pepper.
- Mix until well combined but avoid overmixing.
- Shape the mixture into a loaf and place it on a parchment-lined baking tray or loaf pan.
- Wrap with Bacon:
- Lay bacon slices over the top of the meatloaf, tucking the edges underneath to fully wrap the loaf.
- Bake the Meatloaf:
- Bake for 45–60 minutes, or until the internal temperature reaches 160°F (70°C).
- If desired, broil for an additional 2–3 minutes to crisp up the bacon.
- Prepare the Roasted Potatoes:
- While the meatloaf is baking, toss potato wedges and mushrooms with olive oil, garlic powder, paprika, salt, and pepper.
- Spread them out on a baking sheet.
- Roast in the oven alongside the meatloaf for 25–30 minutes, flipping halfway through, until golden and tender.
- Serve:
- Slice the meatloaf and serve with roasted potatoes and mushrooms.
- Garnish with fresh parsley or chives.
