Bacon-Wrapped Chicken with Sweet Glaze
**Ingredients:**
– 4 boneless, skinless chicken breasts
– 8 slices of bacon
– 1/2 cup brown sugar (or honey)
– 2 tablespoons soy sauce
– 2 teaspoons smoked paprika
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– Salt and pepper, to taste
– Optional: chopped parsley for garnish
**Instructions:**
1. **Preheat the Oven:**
– Preheat your oven to 375°F (190°C). Line a baking sheet with aluminum foil and place a wire rack on top. This will allow the bacon to crisp up during baking.
2. **Prepare the Chicken:**
– In a small bowl, mix the smoked paprika, garlic powder, onion powder, salt, and pepper. Rub this seasoning mix all over the chicken breasts.
3. **Wrap the Chicken:**
– Wrap each chicken breast with 2 slices of bacon, overlapping slightly. You can secure the bacon with toothpicks if necessary.

4. **Make the Glaze:**
– In a separate bowl, combine the brown sugar and soy sauce to create a glaze. If you’re using honey, simply warm it slightly to make it easier to spread.
5. **Coat the Chicken:**
– Brush the glaze generously over the bacon-wrapped chicken breasts.
6. **Bake:**
– Place the chicken on the prepared baking sheet and bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 74°C) and the bacon is crispy.
– During the last 5 minutes of baking, you can turn on the broiler to help caramelize the glaze and crisp up the bacon, but keep a close eye to prevent burning.
7. **Serve:**
– Remove the chicken from the oven and let it rest for a few minutes. Garnish with chopped parsley if desired.
