Avocado Caprese Salad
Ingredients:
- 1 cup cherry tomatoes, halved
- 1 ripe avocado, diced
- 1 small red onion, thinly sliced
- 1 cup fresh mozzarella balls (bocconcini or mozzarella pearls)
- Fresh basil leaves (optional)
For the Dressing:
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
- 1 teaspoon dried Italian herbs (or a mix of dried oregano, basil, and thyme)
Instructions:
- Prepare the Salad:
- In a large bowl, combine the halved cherry tomatoes, diced avocado, thinly sliced red onion, and mozzarella balls.
- Gently mix to combine, being careful not to mash the avocado.
- Make the Dressing:
