 Ingredients:

– **For the Meat:**
– 2 pounds of turkey breast or pork loin
– Salt and pepper to taste
– 1 tablespoon olive oil

– **For the Stuffing:**
– 4 cups of cubed bread (day-old works best)
– 1/2 cup chopped onion
– 1/2 cup chopped celery
– 1/4 cup butter
– 1 teaspoon dried sage
– 1 teaspoon dried thyme
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1 1/2 cups chicken or vegetable broth

– **For the Gravy:**
– 2 cups turkey or chicken broth
– 2 tablespoons butter
– 2 tablespoons all-purpose flour
– Salt and pepper to taste

1. **Prepare the Meat:**
– Preheat the oven to 350°F (175°C).
– Season the turkey breast or pork loin with salt and pepper.
– Heat olive oil in a large skillet over medium heat. Brown the meat on all sides until golden brown. Remove from skillet and set aside.

2. **Prepare the Stuffing:**
– In the same skillet, melt butter over medium heat. Add chopped onion and celery, and cook until softened, about 5 minutes.
– In a large bowl, combine the cubed bread, cooked onion and celery, sage, thyme, salt, and pepper. Add the broth gradually, mixing until the bread is moist but not soggy.
– Spread the stuffing evenly in a greased baking dish.

3. **Assemble and Bake:**
– Place the browned meat on top of the stuffing in the baking dish.
– Cover the dish with aluminum foil and bake for 1 hour.
– Remove the foil and bake for an additional 15-20 minutes, or until the meat is fully cooked and the stuffing is golden brown.

4. **Prepare the Gravy:**
– In a medium saucepan, melt butter over medium heat. Stir in flour to form a roux, cooking until it is golden brown.
– Gradually whisk in the broth, ensuring no lumps form. Continue cooking until the gravy thickens.
– Season with salt and pepper to taste.

5. **Serve:**
– Slice the meat and serve over the stuffing. Pour the gravy on top before serving.
