Ingredients:

– 2 cups cooked white rice
– 1 can (5 oz) tuna in water or oil, drained
– 1/2 cup frozen peas, thawed
– 1/4 cup finely chopped red onion
– 1/4 cup finely chopped bell pepper (any color)
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 1 teaspoon garlic powder
– 1 teaspoon ground ginger
– 1/2 teaspoon black pepper
– 1/4 cup chopped green onions (optional)
– 1 tablespoon sesame seeds (optional)

Directions:

1. **Prepare the Rice:** If you haven’t already cooked the rice, prepare 2 cups according to the package instructions.
2. **Heat the Tuna:** In a large skillet over medium heat, add the sesame oil. Once hot, add the red onion and bell pepper. Sauté for about 2-3 minutes until they start to soften.
3. **Add Tuna and Seasoning:** Add the drained tuna to the skillet, breaking it up with a spatula. Sprinkle in the garlic powder, ground ginger, and black pepper. Stir well to combine.
4. **Combine with Rice:** Add the cooked rice and thawed peas to the skillet. Pour the soy sauce over the mixture and stir to combine. Cook for another 3-5 minutes, allowing the flavors to meld together and the rice to heat through.
5. **Garnish and Serve:** Remove from heat and transfer to serving bowls. Garnish with chopped green onions and sesame seeds if desired.
