Ingredients:

– 1.5 pounds baby potatoes, peeled and cut into bite-sized pieces
– 1/2 cup extra virgin olive oil
– 1/4 cup apple cider vinegar or white wine vinegar
– 3 cloves garlic, minced
– 1 tablespoon fresh rosemary, chopped
– 1 tablespoon fresh thyme, chopped
– 1 tablespoon fresh parsley, chopped
– 1 teaspoon red pepper flakes
– 1 teaspoon black peppercorns
– 1 teaspoon kosher salt
– 1/2 teaspoon mustard seeds
– Optional: 1/2 teaspoon sugar

Instructions:

1. **Prepare the Potatoes:**
– Place the potatoes in a large pot of salted water and bring to a boil. Cook until tender, about 10-12 minutes. Drain and let cool slightly.

2. **Prepare the Marinade:**
– In a mixing bowl, whisk together the olive oil, vinegar, garlic, rosemary, thyme, parsley, red pepper flakes, black peppercorns, kosher salt, mustard seeds, and sugar (if using).

3. **Marinate the Potatoes:**
– Place the cooled potatoes in a large jar or airtight container. Pour the marinade over the potatoes, making sure they are fully submerged in the liquid. Seal the jar or container tightly.

4. **Marinating Time:**
– Allow the potatoes to marinate in the refrigerator for at least 24 hours before serving to let the flavors meld together. The potatoes can be stored in the refrigerator for up to one week.

5. **Serve:**
– Serve the marinated potatoes chilled or at room temperature as a side dish or appetizer. They are perfect for picnics, barbecues, or as part of a charcuterie board.
