 Crispy Fried Chicken Strips

Ingredients:

– 2 large chicken breasts, cut into strips
– 2 cups buttermilk
– 2 cups all-purpose flour
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– 1 teaspoon onion powder
– 2 large eggs
– 1 cup crushed cornflakes or panko breadcrumbs
– Vegetable oil for frying

 Instructions:

1. **Marinate the Chicken:**
– Place the chicken strips in a bowl and pour the buttermilk over them. Let them marinate for at least 30 minutes, or overnight in the refrigerator for best results.

2. **Prepare the Coating:**
– In a shallow dish, mix the flour, salt, black pepper, paprika, garlic powder, and onion powder.
– In another bowl, beat the eggs.
– Place the crushed cornflakes or panko breadcrumbs in a separate shallow dish.

3. **Coat the Chicken:**
– Remove the chicken strips from the buttermilk, allowing any excess to drip off.
– Dredge each strip in the seasoned flour mixture, then dip in the beaten eggs, and finally coat with the crushed cornflakes or panko breadcrumbs. Press the breadcrumbs firmly to ensure they stick.

4. **Fry the Chicken:**
– Heat vegetable oil in a deep skillet or frying pan to 350°F (175°C).
– Carefully place the chicken strips in the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.
– Fry the chicken strips for about 3-4 minutes on each side, or until they are golden brown and crispy, and the internal temperature reaches 165°F (74°C).
