Ingredients:

– 1 cup all-purpose flour
– 2 tablespoons sugar
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 1 cup milk
– 1 large egg
– 2 tablespoons melted butter or vegetable oil
– 1 teaspoon vanilla extract (optional)

Instructions:

1. **Mix Dry Ingredients:** In a large bowl, whisk together the flour, sugar, baking powder, and salt.

2. **Mix Wet Ingredients:** In another bowl, whisk together the milk, egg, melted butter (or oil), and vanilla extract until well combined.

3. **Combine Ingredients:** Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are okay.

4. **Preheat Pan:** Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or oil.

5. **Cook Pancakes:** Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges start to look set, about 2-3 minutes. Flip and cook until the other side is golden brown, another 1-2 minutes.
